Quick Cooking’s Karin Calloway has a fast and easy recipe.
I love to simmer up a great big pot of Bolognese sauce but since the classic recipe includes lots of chopping and at least three hours of simmering on top of the stove, it doesn’t fall into the category of weeknight fare. That was until I came up with a way to speed up the process without sacrificing the flavor in this week’s Quick Gnocchi with Spicy Chicken Bolognese. I’ve begun the recipe by sautéing some onion and ground chicken in a little olive oil.
Now I’ll flavor the mixture up with some chopped garlic, dried chili flakes, Italian seasonings, salt and freshly ground black pepper.
I love making homemade potato gnocchi, but like Bolognese sauce is reserved for the weekends. Now you can purchase gnocchi in the pasta aisle of most supermarkets and it cooks up in just minutes.
To complete the sauce, I’m going to add a little balsamic vinegar, tomato paste, red wine and some canned tomatoes. Bring the sauce to a boil and then simmer, uncovered, until slightly thickened.
This full-flavored Bolognese is ready to serve in about 30 minutes, bringing a weekend Italian meal to a busy weeknight. Add a prepared Caesar salad and garlic bread to complete your menu.
