 The sides are just as important at a big family Sunday supper or backyard barbecue as the main dishes. This week’s recipe for Creamed Corn Casserole is an old fashioned dish I’ve had in my recipe file for years. The casserole comes together quickly and the main ingredient is some canned cream-style corn.

Combine the corn with a little sugar, flour, eggs and milk. Now add a little cheddar cheese and it’s ready to spread in a greased baking dish.

Like most old fashioned casseroles, this one has a crunchy topping that’s a combination of crushed saltine crackers and melted butter.

Just combine the two and then sprinkle over the top of the casserole.

This slightly sweet, savory casserole is as welcome at Sunday supper as it is at covered dish dinners or this weekend’s Memorial Day cookouts. Bake it up and then watch it disappear.
